Spring Roll Salad
When prepping your meals ahead of time, this spring roll salad is a great option to enjoy the taste of a spring roll, but without the soggy rice paper. Use as many vegetables as you like without the fuss of the wrap. With different protein options, you can prepare this salad using whatever protein you have on hand. Store the spicy peanut sauce in a small container and enjoy a fresh, tasty salad when you are ready!
Salad Ingredients
Cooked shrimp, chicken, or canned/fresh tuna
Cucumber, julienned
Carrots, peeled and julienned
1 head green leaf lettuce or cabbage
Fresh mushrooms, sliced thin
Sushi ginger (optional)
Spicy Peanut Sauce
¼ cup peanut butter
¼ cup water
1 tablespoon hoisin
1 teaspoon Sriracha, or more, to taste
½ teaspoon Coconut aminos, or more, to taste
Instructions
To make the spicy peanut sauce, whisk together the peanut butter, water, hoisin, Sriracha and coconut aminos in a small bowl. If you’d like to thin in out more, add more water; set aside.
Add all salad ingredients to your bowls/meal prep containers.
Drizzle with spicy peanut sauce and enjoy!
