Stuffed Italian Chicken
I’m a huge fan of Italian dishes! Give me all the garlic, basil, balsamic…yum! This super easy recipe turns your basic chicken meal into a meal full of flavor. With creamy goat cheese, fragrant basil, garlic, sun-dried tomatoes and drizzles of balsamic and honey, you will wonder why you didn’t try this before!
Ingredients:
Note: I don’t typically measure out all of my ingredients, and usually prepare as much chicken as I need for the day/week. This recipe is literally something I threw together one night. Don’t be shy… season to your taste. Experiment and have fun!
Boneless, Skinless Chicken Breasts (thinly sliced chicken breasts work great)
Garlic Powder
Himalayan Pink Salt
Fresh Ground Black Pepper
Goat Cheese (you can use spreadable or crumbles)
Basil (fresh or dried)
Sun-Dried Tomatoes (NOT in oil. You can typically find these in a bag, in the produce section)
Balsamic Vinaigrette
Honey
Instructions:
Preheat your air fryer to 400 degrees.
Season chicken to taste using garlic powder, salt, pepper, and basil.
Add goat cheese, sun-dried tomatoes and drizzle with balsamic.
Role chicken breast and pin together with a toothpick.
Drizzle lightly with more balsamic and a light drizzle of honey.
Transfer chicken to a foil-lined air fryer basket and cook for approximately 15 minutes, until cooked through. Do not overcook as this will dry out your chicken.
Serve with a balsamic green bean, mushroom medley (garlic powder, mushrooms, green beans drizzled with balsamic), Italian potatoes or a small serving of pasta.
