Basil Garlic Shrimp with Curry Rice
I’ll be very honest, I don’t often measure my ingredients when I cook. I often season to taste. It makes my life easier, and meal prep quicker. You don’t always have to follow a recipe. Allow yourself some freedom and get creative. Give it a try with this recipe!
This basil, garlic, shrimp and curry rice recipe is easy to throw together. Loaded with fresh veggies and protein, this is a healthy option with basic ingredients. Figure out how much you need for each of your meals during prep, and season to taste. Give it a try…you really can’t screw this one up!
Ingredients:
Basil, chopped
Garlic, minced
Shrimp, peeled and deveined
Onion, diced
Mushrooms, sliced
Cooked Jasmine or Basmati Rice
1 Yellow Curry Bouillon Cube
I use Edward & Sons, which can be found on their website, Amazon or at Sprouts
Fresh or Frozen Green Beans
Bell Pepper, sliced
Fresh Ground Black Pepper
Himalayan Pink Salt
Instructions:
Sauté your shrimp with garlic and fresh basil and set aside.
To the same pan, add minced fresh garlic, diced onion and fresh mushrooms. Once onions are translucent, add cooked rice, garlic powder and one yellow curry bouillon cube. Let simmer for a few minutes before adding fresh basil. Simmer until broth is thickened. Set aside.
To the same pan, add fresh green beans and sliced bell pepper. Add garlic powder, fresh ground black pepper, and Himalayan pink salt. Sauté until tender.
Notice I don’t measure anything. Prepare what you need, to taste.
