Blueberry Oat Bread
I absolutely LOVE how many ways I can incorporate oatmeal into delicious, healthy recipes! This blueberry oat bread does NOT disappoint. This low-sugar recipe boasts 10 grams of protein, and only 120 calories per slice. Using sweet fresh or frozen blueberries, you can eat it as a healthy snack, or incorporate into your breakfast. Serve warmed up in the microwave, toasted, or even chilled straight from the refrigerator. You can top it with a half serving of whipped cream cheese, or eat it with a side of egg whites. Either way you can’t go wrong!
Ingredients
125 grams Old Fashioned Oats, blended into a flour
55 grams Cinnamon Protein Powder
1 tsp Baking Powder
1 tsp Baking Soda
30 grams Whole Earth Stevia & Monk Fruit Sweetener
2 Whole Large Eggs
110 grams Pumpkin Puree
125 grams Nonfat Plain Greek Yogurt
1 tsp Butter Extract
1 tsp Vanilla
25 grams Unsweetened Almond Milk
½ tsp Himilayan pink salt
½ tsp Nutmeg
1 tsp Cinnamon Powder
94 grams Blueberries (fresh or frozen)
Instructions
Pre-heat oven to 350 degrees.
Lightly spray a loaf pan with olive oil.
Blend all ingredients (except blueberries) in a food processor until smooth.
Gently fold in the blueberries.
Pour into prepared loaf pan.
Bake for 35-40 minutes, or until a toothpick comes out clean.
Remove from oven and allow to cool on cooling rack for at least 15 minutes before slicing into 8 servings.
