Poke Bowls
Filled with fresh veggies, this poke bowl is a great substitute for sushi rolls. It is easy to weigh out your ingredients for meal prep so you are able to calculate all of your macros, easily.
1 pound sushi grade tuna or salmon
¼ cup coconut aminos
1 tsp rice vinegar
1 ½ tsp sesame oil
⅓ cup green onions
½ tsp sesame seeds, plus more for garnish
Instructions
In a bowl, combine all poke ingredients. You can serve right away, or marinate for at least an hour in the refrigerator.
Optional bowl ingredients
Rice
Salad greens
Shredded carrots
Shredded beets
Edamame
Cucumber
Avocado
Fresh ginger
Eel sauce
Sriracha sauce
Seaweed salad
Instructions
Add any of the optional bowl ingredients to the bowl, top with tuna/salmon poke. Garnish with sesame seeds and enjoy!
