Sheet Pan Mahi Fajitas

 
 

Looking for something spicy and fun for meal prep, and loaded with veggies? These mahi fajitas will hit the spot. Pair with some fresh salsa and avocado in a salad, or low-calorie wrap. For a more carb-dense meal, add some cilantro lime rice.

  • 1 large mahi fillet

  • 1 each, red, green and yellow pepper, sliced

  • 1 yellow onion, sliced

  • (Optional) mushrooms, tomatoes

Marinade

  • ⅓ cup olive oil

  • 1 tbsp chili powder

  • 1 ½ tsp cumin

  • ½ tsp garlic

  • 1 tsp salt

  • ½ tsp pepper

Instructions

  • Preheat the oven to 400 degrees.

  • Line the baking sheet with parchment paper.

  • Combine ingredients for marinade, setting aside 2 tbsp.

  • Toss the veggies in marinade and spread on a baking sheet.  Bake for 10 minutes.

  • Remove the baking pan from the oven and add mahi fillet, basting with the remaining marinade.  Bake for 20 more minutes, or until cooked through.

  • (Optional) Serve with cilantro lime rice.

*Greek yogurt is a great substitute for sour cream.
