Blueberry Oatmeal Muffins

These muffins are a healthy, quick option that can be enjoyed at breakfast, or for a snack. Often I pair them with egg whites or Greek yogurt for some added protein.

Ingredients

  • 2 eggs

  • 1/3 cup whipped cream cheese

  • 1 tbsp coconut oil

  • 1-1/2 tsp vanilla

  • 5 tsp raw sugar*

  • 1/3 cup cashew/almond milk

  • 225 grams oats/oat flour

  • 1-1/2 tsp baking powder

  • 150 grams blueberries (fresh or frozen)

  • 1/2 tsp Cinnamon

  • 1/8 tsp nutmeg

 

Instructions

Whisk together the eggs and cream cheese until smooth. Add coconut oil, vanilla, sugar and milk. Combine oats/oat flour and baking powder. Add mixtures together. Fold in blueberries. Divide evenly amongst 12 muffin cups. Bake at 350 degrees fro 18-22 minutes.

*You can use apples instead of blueberries.

*You can replace the sugar with monk fruit, or other sugar substitute of your liking.
