Sweet Chili Chicken

 
 

I love a good stir fry recipe as it’s easy to combine a mix of veggies, and a great way to keep things creative. This sweet chili chicken recipe is quick and easy, and simple to prepare, with all your ingredients combined in one bag or bowl, then cooked in the air fryer in 15 minutes. It comes out hot and crispy! Toss to coat in your sweet honey chili sauce and you have a dish that is full of flavor and can be combined with any vegetable medley you choose!

Ingredients:

  • 2 Chicken Breasts, cut into chunks

  • 5 Tbsp Almond Flour

  • 1 Tsp Garlic Powder

  • 1 Tsp Paprika

  • ½ Tsp Himalayan Pink Salt

  • ½ Tsp Fresh Ground Black Pepper

  • 50 grams Liquid Egg Whites, or 1 Whole Large Egg

  • Approximately ½ Container (4 oz) Panko or Breadcrumbs

For the Sauce:

  • 4 Tbsp Sweet Chili Sauce

  • 2 Tsp No Sugar Added Ketchup

  • 2 Tsp Raw Honey

  • 2 Tbsp Coconut Aminos

  • 1 Tsp Lime Juice

  • ½ Tsp Onion Powder

  • ½ Tsp Garlic Powder

  • 1 Tsp Cornstarch

  • 70 Ml Water

Instructions:

  • In a large bowl, or ziploc bag, add the almond flour, garlic powder, paprika, himalayan pink salt and fresh ground pepper.  

  • Add the chunks of chicken, tossing around to coat.

  • Add liquid egg white (or whole large egg) and toss again to coat chicken.

  • Add breadcrumbs, coating chicken well.

  • Preheat air fryer or oven to 400 degrees.

  • Place chicken in a prepared airfryer basket/baking pan and lightly spray with olive oil.  This will create a more crispier chicken.

  • Cook for 10 to 15 minutes, until cooked through.

Prepare the Sauce:

  • Add all of the sauce ingredients, except the cornstarch and water, to a small skillet.

  • Let mixture bubble for about 2 minutes.

  • Add the water to the cornstarch, then add it to your skillet, stirring well.

  • Let sauce thicken for about another 2 minutes.

  • Place chicken in a medium-sized bowl, drizzle your sauce over the chicken and toss, until chicken is thoroughly coated.

Notes:

  • Oats, blended in a food processor, are a great substitute for the panko/breadcrumbs.

  • This recipe is delicious served with garlic rice!

  • Consider using stir-fried, or air-fried, bell peppers, green beans, onion and mushrooms with coconut aminos and garlic for your vegetable side.
